Update notebook environment for 2024 training session

I need for instance to be able to run properly the notebook on Docker on my laptop which runs macOS.

Conda environment needs some tweaking: for instance the gcc version needs to be specified exactly to run the C++ 14 and C++ 17 standards (which was not the case last time I tried).
