Hotfix/407 validation step

This small MR fixes issue 407, correcting: (1) The backend code of TorchTrainingPlan that raised errors when using a custom testing_step method. (2) The demonstration code implemented to showcase custom metrics computation ("general-training-and-validation" notebook, part 3.2).
