[DOC] Replace notebook with lab

I think it can be interesting as it simplifies the workflow:

For example you can see in different tabs the TP and the theory

I will have a look later this week (currently I am rereading and modifying the content of some notebooks).

I tried on Friday to switch to JupyterLab (I also did last year...) and went back to vanilla Jupyter due to two features I couldn't get working properly with JupyterLab:

• Use of bibtex citations.
• Automatic update of the table of contents (the one within the notebook - JupyterLab can easily put table of contents on the side but not in the notebook itself).

If those are working sure JupyterLab is the future anyway

You're right: Jupyter-lab is more friendly to use, and the drawbacks I mentioned are not enough to justify not using it (a ticket will be opened to reming adding a proper citation support if a tool emerges in Jupyterlab community).
